Trihydroxystearin, also known as oxidized stearin, is a mixture of partially oxidized stearic acid and glycerides of other fatty acids. Its molecular formula is C57H110O9 and its relative molecular mass is 939.48. Antioxidants can only hinder the oxidation reaction. The effect of delaying the onset of spoilage does not change the effects of spoilage. Therefore, when using antioxidants, it must be properly grasped at an early stage to exert its antioxidant effect.
